Blackberry vegan cheesecake recipe
One of my favourite desserts is vegan cheesecake. I have used frozen blackberries which I have picked myself last year, can you believe it, yeah, I have done it with my own hands.
But if you would like to try this delicious recipe you can use any fruit either fresh or frozen.
The beauty of this sweet treat is very quick preparation time and simplicity as it contains only 6 ingredients. I wanted to make this cake as healthy as possible by combining different raw ingredients.
I have added flax seed to enrich this blackberry vegan cheesecake with it's source of fibre and Omega 3 fat.
You don't need to bake it , you don't need freezer for this vegan cheesecake to set, you don't need to wait for hours to consume your dessert. It will be ready to eat within 30-45 minutes. It's smooth and creamy consistency and delicious taste of fruits will make even the most fussy cake lover happy and it will melt in your mouth. You can keep this awesome dessert for up to a week in a air tight container in the fridge. This dessert will be great for diabetics.
Recipe
Preparation time 10-15 minutes
4 serving
Crust
80 grams of pitted, chopped dates ( you can use any type)
150 grams of rolled oats
3 tsp of flax seed
2 tsp of water or plant milk
Filling
300 grams of frozen or fresh blackberries( you can use any fruits)
4tsp of stevia sweeter( you can use any type of sweetener such as birch sugar, maple syrup
1 tsp of agar agar ( plant based gelatin)
400 ml of plant milk
1. Combine dates, oat and flax seed in blender until they are smooth in it's texture. take ready crust out of blender and transfer to small ramekin/base/glass dish , press firmly with fork or spoon to create firm, well bonded base of your vegan cheesecake.
2. Transfer your fruits of your choice to blender and blend for about 2-3 minutes until you will receive smooth mixture.
3. Transfer your crushed fruits to medium saucepan , pour milk , add sweetener and agar agar powder. Set on medium heat and keep stirring the mixture all the time and then boil it for 2-3 minutes after first bubbles appear in order to activate agar agar powder.
4. Leave it to cool down for 5 minutes and then transfer this mixture to ramekin/base/glass dish
to set for another 30-45 minutes.
